Sunday Make Ahead Recipe: Chocolate Drops of Joy

Hi there, Mrs. 1500 again.

I have a dessert recipe for you today. This is perfect for bake sales or just to sit around and eat. It freezes wonderfully, and is extremely quick to whip up. The name comes from a friend that I made it for, who is vegan and therefore doesn’t get to enjoy real tasty desserts often.

Chocolate Drops of Joy
1 bag chocolate chips
1/4 – 1/2 cup peanut butter, smooth or chunky, your choice
Raisin Bran or bran flakes

Pour chocolate chips in a large skillet over low heat. Add peanut butter and stir until melted and combined. Remove from heat and stir in raisin bran or bran flakes until coated. 2-4 cups depending on how coated you want it. Crunch them up slightly if you desire. Spoon onto wax paper or parchment and refrigerate until firm. Try not to eat them all in one sitting.

The peanut butter in this recipe serves the purpose of softening the chocolate so it isn’t rock hard when you bite into it. You can swap out other nut butters if you desire.

    I don’t love bran flakes, do you think that corn flakes would hold up OK, or they aren’t substantial enough? I think my mom once made something similar to this with those noodles that come in a can.

      Corn flakes work just fine in a pinch, too. The bran flakes might work for you, since you cannot taste them. Get your fiber… Hey, these are healthy!

    I don’t know if I would actually get to the baking part of this. I may just take and eat the chocolate chips and peanut butter. Actually, I usually take those two and put them on apple slices. It’s delicious. Thanks for the recipe.
