Sunday Make-Ahead Recipe: Ranch Chicken

OK, this one isn’t really make ahead, but it is super easy. Here we go:

Ranch Chicken
1 Packet Dry Ranch Mix
1 Box Jiffy Cornbread Mix
1 LB Chicken Breasts, whole or cut however you want

Preheat oven to 400. Mix ranch and cornbread mix together in a large ziploc bag or tupperware container. Put in chicken, one breast at a time, close bag or container and shake. Remove chicken and put on baking sheet. Repeat until all chicken is coated. Put in oven and bake 10-15 minutes, until no pink in center of chicken when cut.

This isn’t a make-ahead because the coating will be crisp when you first take it out of the oven, but will turn soggy if you store it in the refrigerator. I never seem to use up all the coating mix, so I put the container in the freezer and use it again. NOTE: Do not use if you do not store in the freezer. Bacteria or something else will grow and turn your chicken into yuckness.

You can use this chicken on salads, as a main entree, as more flavorful home made chicken nuggets. They are quite tasty, the seasonings don’t overpower, and it bakes up crisp without all the extra fat associated with frying.

    Along those lines, I recently started making my own Jiffy Cornbread mix from scratch.
    2/3 c flour
    1/2 c fine cornmeal
    3 T sugar
    1 T baking powder
    1/4 t salt
    is about the equivalent of 1 box of Jiffy mix. Mr PoP likes that mix, combined with 1/2 c mashed banana (~ 1 ripe banana), 2T oil, and 1/2 c milk. Makes 6 good sized muffins. Just made a batch today, actually =)

    If anyone has the spice equivalents for what go into a packet of ranch dip mix I’d love to hear them – I’m on a kick of trying to get the pre-made packets out of our diet slowly but surely!

    This sounds delicious and incredibly easy!! I think this will be made in our house in the next two weeks….

    I want to say we have the Jiffy corn muffin mix; is that different from the “corn bread” mix you listed above? I went to their website and only saw the muffin mix. Just want to make sure I’m doing this right!
